Miso Mad Apple

The aubergine is believed to have originated from East Africa and domesticated in Southeast Asia. The first known written record of this plant is in a Chinese treaty dating back to 600 BCE. High society women would make a dye made from aubergine skins to stain their teeth black which after polishing would shine. In Europe before the 1900s aubergine consumption was thought to cause insanity and became known as ‘mad apple’. Nowadays we know it as a much-prized, high fibre ‘vegetable’ packed full of antioxidants.

Preheat the oven to 180°C fan.

Bake for 30 minutes. Whisk the glaze ingredients together. Remove the aubergine from the oven and brush with the glaze. Place under a hot grill for 5 minutes.
