Gajar ka halwa (Carrot halwa)
"Winters" and "Gajar ka halwa" go hand in hand. No winter season goes without having this classic dessert.
So here's how I make halwa with carrots.

Ingredient

Cooking instructions
* Step 1
In a pressure cooker, put grated carrots, salt, cardamoms, milk powder, 1 tbsp ghee and water.
* Step 2
Mix. Switch the flame on. Put the pressure cooker lid and cook at slow flame for 2 whistles. Switch off and let the cooker release pressure. Remove the lid and mash the carrots. Now switch the flame on. In slow flame saute the boiled carrots till it looses it's moisture. Give occasional stirring. As moisture is almost lost, put oil and saute for some more time.
* Step 3
Now put milk. Stir occasionally and cook till amount of milk is reduced.
Add dry fruits and rest of the ghee.
* Step 4
Mix well and continue cooking at slow heat.
Next add sugar.I added 3 tbsp sugar,that was enough for us. Now after adding sugar, the halwa becomes bit liquidy. At slow heat continue cooking with occasional stirring and mixing, till the halwa leaves the sides and becomes thick, but not dry.
Put essence and mix.
* Step 5
Hot hot gajar ka halwa is ready!!
