Sanja (Sooji upma with buttermilk)
Sanja is a Maharashtrian dish made with sooji...It is delicious!!
It is mostly like the South Indian sooji upma but the taste differs due to the difference in tempering and also due to the buttermilk used in it.

Ingredient
Food ration :
3-4 persons

Cooking instructions
* Step 1
Dry roast sooji for 3-4 minutes. Keep it aside.
Next take curd in the cup. Add water and make it full one cup.
Put this in a blender jar. Into the jar put more 1.5 cups water from the same cup.
Now blend.
Buttermilk is ready. Keep aside.
* Step 2
Next heat a kadhai with oil. Splutter mustard seeds, cumin seeds. Add fresh green chillies, grated ginger and curry leaves. Put chopped onion. Saute till translucent.
* Step 3
Put peanuts. Fry for some time till peanuts are fried.
(You can even fry peanuts separately and add it in the end.)
Next add turmeric powder and hing.
* Step 4
Next add the prepared buttermilk and stir continuously. Flame must be medium.
As buttermilk comes to boil little bit, add salt to taste. As the buttermilk comes to a nice boil, put the roasted semolina (sooji).
* Step 5
Stir continuously to make it lump free.
It's done... switch the flame off.
* Step 6
Cover and let it be as such for 2-3 minutes
* Step 7
Remove cover and give a gentle mix.
It's smooth and soft...
Serve hot hot...
Buttermilk gives a nice tangy flavour to the dish...
