Thai style fried rice with vegetables and tofu

Don't want to eat plain rice? Here's a fix for you... Add lots of vegetables to your precooked rice,add in awesome Thai style flavours, break in an egg, include tofu...and there you go... this Thai style fried rice will surely win hearts... Cooking instructions

* Step 1

Heat a pan with a tsp of oil. Put tofu pieces. Add salt and 1/2 tsp pepper. Stir fry. Then add a tsp of the prepared sauce mixture. Mix and let it be on slow flame for some time. It's ready take out and keep aside. Next heat a kadhai/ pan/ wok with oil. Saute garlic, green chillies and onion.

As it turns little brownish, add the vegetables.

Add chopped cabbage and carrots. Put salt and pepper. Add grated ginger. Mix all, cover and cook till the veggies are cooked yet crunchy.

Next add the red bell pepper and blanched sweetcorn. Mix.

Next add a tbsp of the prepared sauce mixture. Mix all well. Let it be on slow flame for some time. Next add the precooked rice.

Mix well. Next add the sauce mixture gradually little little and go on mixing the rice. Flame must be medium.

* Step 7

Next make a pocket in the centre of the rice. Break an egg. Put salt and pepper. Scramble it and then mix it with the rice. Let it be on slow flame for some time. Go for gentle intermittent mixing.

It's ready... Serve this yummy THAI STYLE FRIED RICE full of flavours.

You can increase spiciness by adding chilli flakes. Put in finely chopped coriander leaves, squeeze some lemon juice and serve hot...
