Butterscotch cake
I fell short of whipping cream yet, my craving for butterscotch cake made me adjust with whatever cream I had.
But still the sponge, praline with choco chips turned out so well that we all enjoyed the cake.

Cooking instructions
* Step 1
First grease your baking dish with butter and keep aside. In a mixing bowl, add curd, condensed milk and oil. Whip mix nicely till you get a homogeneous smooth mixture.
* Step 2
Now add a pinch of salt, butterscotch essence. Mix well again.
Now take a sieve. Put maida, baking powder, baking soda.
Sieve them down.
* Step 3
Sieving helps in areation and also if there is any big dirt, we can remove them by sieving.
* Step 4
Now cut and fold to mix. Add milk gradually and give mix till you get a smooth cake batter of perfect consistency.
* Step 5
While preparing batter side-by-side preheat oven at 180 degrees for 10 minutes when batter is ready, do not let it wait, immediately pour into greased baking dish. Level it and tap at least twice to remove air bubbles.
Place it in preheated oven for baking at 180 degrees for 30 minutes with both rods on. Check, it required bake for 5 minutes more. Remove from oven for cooling.
* Step 6
Prepare praline now. Keep broken cashewnuts ready. Take a pan with sugar. Let sugar melt and caramelise.
* Step 7
As sugar caramalises, stir it. Add butter and mix. Now add cashewnuts and mix.
* Step 8
Now put the cashew mixed caramel on to a butter greased plate.
* Step 9
Let it cool. After it cools, beat it and break into small uneven bits.
* Step 10
Next take the baked cake divide into two horizontal pieces. In a small bowl mix sugar and water. Mix till sugar dissolves. Sugar syrup is ready. Take this in a sprayer.
Spray sugar syrup on the bottom layer of cake. Keep whipping cream ready. Put stable whipping cream and make an even layer. This I couldn't do. I didn't have enough cream. But you don't miss to do it. Now put praline bits on the cream.
* Step 11
Then place the upper layer of the cake. Moisten it too with sugar syrup. Put whipped cream, layer it nicely. Upon that put praline bits generously. They are crunchy and yum. Liquify chocolate bar and put blobs, put choco chips. Decorate it any way to like.
* Step 12
Cut and enjoy...

* Step 13
For whipping cream we need 100 ml cold water. Put whipping cream powder in chilled water and mix nicely. Put this mixture in the fridge for 15 minutes. Then add butterscotch essence, whip it with a beater till you get stable peaks. Until you use, keep the whipped cream in the fridge.
Remember to keep the beating vessel and beater chilled while using it for beating. If required add sugar as per your taste.
