Masala idli
This masala idli is a chatpata variation to our regular idli. It is so tasty...you don't even need any chutney with it..

Cooking instructions
* Step 1
Wash the urad dal and soak it overnight in enough water. Similarly soak the idli rava in clean water,in a separate vessel overnight.
Next day wash urad dal and grind it using minimum water. Transfer it to a big vessel. Into that put cleaned, strained idli rava and whip mix.
* Step 2
Cover and keep in a warm place for at least 12 hours. It undergoes natural fermentation. It becomes fluffy. Add salt and mix.
Now keep water hot in steamer unit. In an idli stand brush ghee. Put ladle of idli batter into each cavity. Do not overfill. Place this stand in steamer and steam for 12-15 minutes.
* Step 3
As it's steamed,take out and let it cool. After cooling with a spoon remove the idlis and cut it into small pieces.
* Step 4
Next place a kadhai with oil.Heat it. Splutter mustard seeds, cumin seeds, add dry red chilies,curry leaves and dust hing. Now add salt to taste and add turmeric powder, Mix. Keep flame slow.
* Step 5
Now add 1/2 cup water. Now add red chili powder, sambar masala and amchur powder.Mix. As it boils check the seasonings, and as quantity of water reduces, add the idli pieces. Give a gentle mix. Idlis get nicely coated. Switch the flame off.
* Step 6
Garnish with chopped coriander leaves and serve hot...
It goes nice with piping hot coffee...
