Sambar vada

Cooking instructions

* Step 1

Place a tawa and dry roast the above-mentioned spices. As you get a nice aroma take them out and let cool. Divide the spices into half. Take one portion, add coconut, little water and grind into a smooth paste. Keep aside. The other portion make dry powder and store it in an airtight container for later use.

Next take toor dal. You can also use masur dal. It also tastes great in Sambar. So take dal, add salt, turmeric, chillies and chopped tomato. Add water covering an inch above dal and pressure cook for 2-3 whistles. Let it cool.

Next in warm water soak tamarind. As it becomes soft, take out its pulp and add into the dal. Give a gentle mix.

Now side by side boil vegetables in water just covering the vegetables. Add salt and turmeric powder.

As vegetables are cooked, add them along with the water into the tamarind dal mixture. Give a nice gentle mix. Now take the prepared sambar masala paste and add it into the vegetable and dal mixture.

Mix all well and prepare for tempering. Take a big kadhai. Heat ghee, splutter mustard seeds, cumin seeds. Add few fresh curry leaves, dry red chilies, pinch of turmeric and hing. Add the vegetable dal mixture into the tadka and cover it immediately so that the tasks flavour is captured.

Mix well. Adjust consistency by adding water. Let it be on flame and come to boil. If you like a sweeter version add a small piece of jaggery and let it dissolve. Give a nice gentle mix. Aromatic tasty sambar is ready... You can have it with hot steaming rice/ idli/ vada/ dosa/ upma So we are now using this sambar to make SAMBAR VADA

So urad dal was soaked for 4 hours, then using minimum water it was grinded into a smooth paste and kept for resting in fridge. Now take the vada batter out. Add salt, cumin seeds and whip mix. This gives nice areation, which is required to make vadas crispy outside and soft inside.

Now heat oil for deep frying. Oil must be medium hot. Put in doughnuts shaped vadas. Fry till nice golden brown colour. Drain extra oil and put the hot vadas into warm sambar.

* Step 10

Vadas absorb the sambar. So adjust consistency of the sambar accordingly. Let it rest for sometime. Before serving just warm the sambar vadas a bit more and serve... A cup of hot coffee with that is superb...
