Cooking instructions
* Step 1
Take potatoes and wash them very nicely. Now cut them with peel into thin slices and put in water to remove the extra starch.
* Step 2
Now take a mixing bowl, put salt, turmeric and red chilli powder. Mix all. Now add the sliced potatoes into and coat nicely. Cover and keep for 10 minutes.
* Step 3
Next take a big mixing bowl. Put sieved besan, salt, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, crushed ajwain, cumin, chilli paste, ginger paste, garlic paste and oil. Mix all these. Add water and mix well to make a lump free smooth batter. Batter must not be very runny neither should it be very thick. It must be flowing consistency. Whip mix to create areation. Cover and keep it for 10 minutes.
* Step 4
Next heat kadhai with enough oil for deep frying.
Take the besan mixture, add soda and give a gentle mix.
* Step 5
Now take the marinated potatoes. Take a potato slice dip into the besan ghol, nicely coating it. Put into medium hot oil. Do not disturb. As it gets bit fried, carefully flip and fry till the pakodas are golden and crisp. Do not keep flame high else the potatoes won't get cooked. Drain the extra oil and keep in a wire mesh container.
* Step 6
It's ready... Serve with tomato sauce... and chai..
