My Homemade Beer Battered Fish & Chips 🐟🍟

A British classic. It's surprisingly simple to make at home, and extremely satisfying! I like making a beer batter as I find it's beautifully light & crispy and more flavourful.

* Step 1

Preheat your oven to 220 (fan). Slice the peeled potatoes into rather chunky chips. Par-boil them for around 4 minutes. Remove and place upon kitchen towel and pat dry. Leave to cool for a couple of minutes.

* Step 2

Spread the chips over a foil lined baking tray. Drizzle over olive oil and gently toss the chips using your hands to coat them in the oil. Begin to cook them in the oven on the top shelf.

* Step 3

Make up the batter for the cod. Add the flour into a large bowl with the tumeric. Stir. Pour in the beer and mix until a smooth quite thick batter is created. Pour vegetable oil into a large deep sided pan (I used a wok), enough to fry the fish in so it'll be just submerged. You want to heat the oil to around 180 degrees.

* Step 4

Once the oil is hot (test by dripping in a bit of batter, if it rises to the top and turns golden it's ready), dredge the fish into the batter until completely coated then carefully lay one fillet into the oil. Cook for about 3-4 minutes on each side until beautifully golden & crispy. To make 'scraps' from the leftover batter simply drip it into the hot oil using a spoon and fry until crispy.

* Step 5

Once each fillet is done, lay it upon kitchen towel to remove any excess oil. Check on the chips. Turn them over and return to the oven for a few more minutes. They should take 20-25 mins in total.

* Step 6

Make up your curry sauce (if having it). Remove the chips from the oven once they are a little golden on the edges. Serve up the fish & chips, scatter over a few scraps of batter and add salt & vinegar if you fancy it. Enjoy! :)
