T-Bone Steak 🥩

Here's how I cook a beautiful T-Bone steak medium rare. For this I used a steak that was approx 500g, larger steaks will need a touch more cooking, say by an extra minute in the oven, again for a very rare steak remove sooner from the oven etc. I like to use smoked salt to give an extra delicious crust that packs in maximum flavour.

Cooking instructions

* Step 1

Remove the steak from the fridge 1 hour before cooking to come up to room temperature. Preheat your oven to 220 (fan). Heat a cast iron skillet or large heavy based frying pan up over a high heat, add in the fat/oil.

* Step 2

Pat the meat dry with kitchen towel and season one side generously with cracked black pepper and salt. Once the oil is smoking add in the steak seasoned side down.

* Step 3

Fry for three minutes. Season the top of the steak then flip it to sear. Again cook for three minutes until a beautiful crust is formed.

* Step 4

Place the skillet and steak into the oven and cook for a further 3 minutes. Remove and transfer the steak to a board to rest for around 8-10 minutes until the juices run out. Carve along the bone then across the grain with a sharp knife so you have 1 inch strips. Serve and enjoy. Perfect served with my daulphinous potatoes (see my other recipe). :)
