Pan Roasted Curried Chicken, Cauliflower & Onions

This really simple pan roast is a superb light meal that doesn't require much prep beforehand. Perfect if you are busy and need a simple yet delicious dish that has lovely aromatic flavours.

Cooking instructions

* Step 1

Preheat your oven to 180 degrees. Line a tray with foil and lay out the chicken pieces, cauliflower and onion pieces. Drizzle over the oil.

* Step 2

Sprinkle over the spices and season well with salt and pepper. Toss everything around in the seasonings and oil to coat. Then rearrange out flat.

* Step 3

Bake in the oven for 25-35 minutes until the chicken is cooked through and the juices are running out clear. Serve up and dollop over some mango chutney. Enjoy! :)
