Here, I present a simple recipe with leftover potatoes, and Himalayan Mountain Seasoning (onion, garlic, parsley, spring onion, chilli, clove, coriander, schezwan pepper, turmeric, calendula). The recipe is simple and easy to prepare. It's delicious with mountain herbal flavours and unique taste of its own. I got the mountain seasoning from Bhutan (Thimphu).

Cooking instructions
* Step 1
Heat oil, splutter ponch phutan, add curry leaves, chopped onion, fresh red chilli and ginger julienne. Saute on low flame till aromatic and onion light brown.
* Step 2
Then add and saute urad daal and chana daal for a minute.
* Step 3
Then add leftover chopped boiled potatoes, cauliflower florets and green peas and salt. Cook on low flame.
* Step 4
It takes 5-7 minutes to be cooked. Now sprinkle the mountain seasonings and the red chilli flakes. Mix well and the delicious dry curry is ready to serve with steamed rice and/or chapati. Enjoy. Thanks.
