Red Amaranthus Stir -Fry

Cooking instructions
* Step 1
Arrange and assemble the ingredients first. Clean, wash and chop the amaranth leaves.
* Step 2
Roast urad daal bodi in vegetable oil. Heat mustard oil, add mustard seeds and dry red chilli. Allow to splutter the mustard seeds.
* Step 3
Add chopped onion, garlic and green chilli. Saute till aromatic and translucent onion, then mix chopped tomatoes.
* Step 4
Now add pumpkin and saute to be cooked. Mix chopped amaranth leaves and fry on medium flame. When the volume of amaranth gets reduced, add salt and mix well.
* Step 6
Then grated coconut 🥥 and crushed urad daal bodi to be added to red amaranth leaves. Cook for a minute after mixing well. Garnish with roasted bodi and red chilli before serving.
