Choco Chips Avocado Muffins

Ingredient

wholewheat flour

1 teaspoon

baking powder

3/4 teaspoon

baking soda

1/2 teaspoon

salt

1/4 cup

honey

3/4 cup

milk

1 teaspoon

vanilla

Cooking instructions

* Step 1

Preheat the a wide pan with lid, on gas in slow flame.

* Step 2

Combine the pastry flour, coconut jaggery powder, baking soda, baking powder, and salt. Set aside.

* Step 3

In a food processor or grinder, blend the avocado with the honey, milk, vegetables oil, and vanilla.

Add the wet ingredients to the dry ingredients and stir until combined. It might be a bit lumpy but just make sure you don’t have dry pockets of flour.

Spoon the mixture into a mini muffin tin. Mine made about 12 mini muffins in two batches. Bake for 25-30 minutes, or until a toothpick comes out clean.

Do not over bake or they’ll dry out and be more crumbly rather than fudgey.
