Tomato Onion Mini Uttapam
Uttapam goes well in breakfast as well as any snack time. This can be made in different ways. I made mini uttapam with onion and tomato as the main ingredients. After going through Ms. Priti Malpani's recipe of mini uttapam, I decided to make them with my remaining idli batter from yesterday. The uttapam were spicy and delicious, and I would like to thank the author Priti ji a lot for her recipe.

Cooking instructions
* Step 1
Add half of chopped green chilli and onion to the batter.
* Step 2
Grease griddle with oil. Spread batter,one ladle at a time. Add chopped coriander, onion and chopped tomato chunks on top of the batter.
* Step 3
Cover and cook on low-medium flame for two minutes. Flip and cook the other side of the uttapam in the same way.
* Step 4
When golden-brown and crispy, remove the uttapam from the griddle. Serve hot with tomato sauce.
