Lemon Pickle(Nimbu Achar)

Cooking instructions
* Step 1
I have taken 3 kagzi lemons from lemon tree of my garden.
* Step 2
Wash the lemons and pressure cook in 3 cups of water for 1 whistle.
* Step 3
Take out the cooked lemons and cool down.
* Step 4
Chop into piece discarding the seeds. Keep aside a little more than 1 tsp juice released, while chopping.
* Step 5
In a pan heat sugar and the 1 tsp lemon juice to dissolve sugar.
* Step 6
Cook the sugar continuously, on low flame, till bubbles form on sugar. This indicates the formation of 2 strands of thickness of sugar.
* Step 7
Then add salt and chili powder. Sauté for 1 minute. Put off the flame.
* Step 8
Add the chopped lemon and mix nicely for 2 to 3 minutes.
* Step 9
Cool and store in a glass jar. Keep in the refrigerator for further use.
