Dates or Khajoor cake is simple and easy to bake. It can be baked without oven also. Wheat flour and jaggery are used here to bring the healthy alternative, to the cake. This cake can be baked, using oil , avoiding butter. I have also used olive oil, to keep the cake soft. I baked my cake in a saucepan on gas store. The outcome is wonderful and the taste is awesome.

Cooking instructions
* Step 1
Sieve the wheat flour, baking powder and baking soda, thrice and keep aside.
* Step 2
Soak the seedless dates in 1/2 cup warm milk for 30 minutes. Grind the dates and milk to a paste.
Then add jaggery and coconut powder to date paste and grind to make a smooth paste.
* Step 3
Add the olive oil to dates paste and beat to get a smooth batter.
* Step 4
Mix the wheat flour to dates batter and mix well before whipping, to get a smooth cake mixture. Mix rest of the milk if the cake batter needs of flowing consistency.
* Step 5
Grease the saucepan with oil and dust with the flour.
* Step 6
Drop the cake batter into the saucepan gradually. Tap twice to remove air bubbles from the cake batter.
* Step 7
Garnish with almonds,cashews and tutti-fruti. Bake the covered pan of dates cake on gas stove on a low flame for 35 -40 minutes.
* Step 8
Remove the pan from stove and allow to cool. Then demold, cut and serve with hot tea or as dessert after lunch /dinner.
