Cooking instructions
* Step 1
In a large mixing bowl: Add in the Ghee & Curd & mix both well
* Step 2
Now, add in the Maida, Baking Powder & Soda-(Well Sifted) & mix everything well together & knead it to a dough- No water is required to prepare the same
* Step 3
Keep the dough aside by putting a cover to it & prepare the sugar syrup now...
* Step 4
In a frying pan/Wok: Add in both the aforementioned sugar & water (measured) & wait until to a boil & then, reduce the flame & allow it to cook for about the next 8-10 mins time
* Step 5
When done- add in the lemon juice to it to prevent the crystallisation of it & turn off the flame, for the time being
* Step 6
Coming to shape the Dough now: Giving it its desired Designer shapes (other than the traditional one), once done with that- it’s time to deep fry them over the low flame
* Step 7
In another frying pan- Take sufficient ghee & cooking oil (both, mixed together) & allow it to just warm up, over the low flame & then drop down the designer shaped BALUSHAHI, in it- in batches
* Step 8
Don’t put many in one batch- This measurement will yield about 12-14 pieces max. Depending on the shapes & sizes made
* Step 9
Each side will take about, 2-3 mins time to get cooked initially & then, flip over to the other side and altogether- A batch of 5-6 pieces of BALUSHAHI will take about 7-8 mins time to get cooked properly
* Step 10
Once fried well- take it out on a kitchen towel & then, immerse it in the warm sugar syrup (it should bebe warm enough, if not hot absolutely) & flip to its both sides, 3-4 times to soak the syrup well inside it & become juicy but not soggy at all, by any means
* Step 11
Garnish it with the chopped Pista, Almonds & Cashews & serve it to your Guests 💁🏻♀️🪔😋
