Warm Spring salad with roasted radishes, carrots and fennel - vegan
I love radishes. Happy to eat them raw but they are also good roasted! They become a little sweeter. And are beautiful alongside some carrots and fennel on some rocket or baby leaves.
The dukkah is a great addition - sesame seeds work brilliantly too.
Cooking instructions
* Step 1
Preheat the oven to 200C.
* Step 2
In a bowl, mix the vegetables with the oil and dukkah. Then lay out on a lined baking tray.
* Step 3
Roast for about 20mins. So the vegetables are tender.
* Step 4
Sprinkle some more dukkah on top - or sesame seeds - and a generous pinch of sea salt. Enjoy 😋
