White asparagus with lemon and pistachios - vegan
White asparagus is a bit more needy than the green. But this recipe keeps it simple!
Cooking instructions
* Step 1
Break the ends off the asparagus (the thick ends). It will break at their natural point. Peel from just below the tip.
* Step 2
Put in a large flat-ish pan (with a lid). Cover with water. Add the lemon juice and some of the zest. Cover and bring to the boil. Simmer for about 20 mins until you can easily cut it with a knife.
* Step 3
Drain the asparagus. Leave them to slightly cool.
* Step 4
To serve, stack them up and sprinkle with the rest of the zest, the pistachios, a splash of olive oil and a generous pinch of sea salt. Enjoy 😋
