White bean truffle dip
So simple and so, so good.
Perfect as a dip with raw vegetables/ crostini/ anything. Also good on toast. (It works on toast with scrambled eggs on top ...)
Most truffle oils are not made with real truffles ... it’s worth finding one that is.
Cooking instructions
* Step 2
Peel the papery bits off the garlic - but leave the cloves in their skins. Chop the tops off. Place in a piece of silver foil in an ovenproof dish. Drizzle with olive oil. Wrap the garlic in the foil. Cook for about 35 mins in the oven.
* Step 3
When the garlic is ready, leave it to cool so you can handle it. When you squeeze the cloves, the flesh will ooze out of the skin.
* Step 4
Put the beans in a bowl. Add the garlic and everything else. Mash together. Add up to a tablespoon of water if you want. You can do this in a blender as well but it’s not necessary. Season according to your taste.
* Step 5
That’s it! Before serving, drizzle a teaspoon of truffle oil on top. Enjoy 😋
