Barley and Beef Soup

Cooking instructions

* Step 1

Heat a large Dutch oven over medium heat.

* Step 2

Coat pan with cooking spray.

* Step 3

Add chopped onion and beef to pan; cook 10 minutes or until onion is tender and beef is browned, stirring occasionally.

* Step 4

And chopped celery to pan; cook 5 minutes, stirring occasionally.

* Step 5

Stir in garlic; cook 30 seconds.

* Step 6

Stir in barley and remaining ingredients, and bring to a boil.

* Step 7

Cover, reduce heat, and simmer 40 minutes or until the barley is done and vegetables are tender.

* Step 8

Discard bay leaves.
