Blueberry coconut french toast

Cooking instructions
* Step 1
Preheat oven to 350°F. In a large mixing bowl, toss bread cubes, coconut, and blueberries.
* Step 2
Place in a large baking dish.
* Step 3
In a medium bowl, whisk eggs, coconut milk, mesquite honey, lemon zest, lemon juice, cinnamon and vanilla.
* Step 4
Pour mixture evenly over bread in baking dish.
* Step 5
Bake for 45 minutes, or until golden brown. Serve with boysenberry syrup.
