Pork Brine

Simple brine for pork. Adjust amount of apple cider vinegar to taste.

Ingredient

3/4 cup

kosher salt

3 cups

water

4 cups

ice

2 tablespoon

pepercorns

Cooking instructions

* Step 1

In large pot, mix all ingredients (except ice) together and then heat and stir thoughrouly until sugar and salt is disolved.

* Step 2

Continue to heat for 10 minutes.

* Step 3

Remove from heat and let cool. Add ice to speed up cooling

* Step 4

Place meat in container and completely cover in brine mix.

* Step 5

Cover and refrigerate for at least 10 hours. Doubled recipe for large pork shoulder.
