Instant Pot Lemon Rice

South Indian main course. Quick and easy recipe for tangy rice and green peas with a burst of lemon flavor.

Cooking instructions

* Step 1

Keep the Instant Pot on saute mode and once hot,add some ghee or oil.

* Step 2

Pop the mustard seeds and add bay leaf, curry leaves,green chilies and shallots.

* Step 3

Add salt,turmeric powder,peanuts and saute well until shallots turn golden.

* Step 4

Pour the lemon juice into this and saute well.

* Step 5

Now add the washed and drained rice into the inner pot.

* Step 6

Mix well all the ingredients until well combined.

* Step 7

Add 2 cups water and check the salt. Now set the 'pressure cook' mode to 4 mins.

* Step 8

Once done,open the lid using Quick Release and transfer the rice to a colander to cool.(to prevent sticking of rice)

* Step 9

Serve hot  with pickle and salad of your choice.

* Step 10

Tip# For cooking perfect Basmati rice in Instant Pot,the rice to water ratio is: Unsoaked Basmati - 1:1.25 ratio & Soaked Basmati Rice 1:1 ratio
