Pearl couscous with tomatoes and pesto 🍃
I found this beautiful colourful tomatoes 🍅! So I decided to roast them and mix them with couscouse and homemade pesto.
Cooking instructions
* Step 1
Couscous: In a pot heat the 550ml water and salt. When the water starts to simmer. Add the pearl couscous and simmer for 10-15 minutes or until soft.
* Step 2
Remove from heat. Drizzle with olive oil and let it cool down.
* Step 3
Toast the pine nuts in a pan on low heat.
* Step 4
Pesto: In a blender add the toasted pine nuts, fresh basil, lemon juice and olive oil. Adjust the consistency with more olive oil. Season with salt and pepper.
* Step 5
Tomatoes: Heat the olive oil in a pan. Add the tomatoes and fry until the skins break.
* Step 6
Take the back of the spoon and gently press the tomatoes. Let is cool slightly.
* Step 7
Mix the couscous, pesto and tomatoes. Enjoy as a meal or a side dish at a braai
