Yakitori is one of the most popular casual everyday dishes in Japan, and often eat outside, as the charcoal used at the Yakitori shops are special and it's sauces are aged and flavourful.

* Step 1

Cut chicken into one bitable size and skewed. Salt and pepper to taste.

Use Shichirin, a Japanese charcoal grill device, but bbq grill works fine. Use the heat indirectly, not direct fire as it burns without cooking meat.

While grilling, brush the sauce on the chicken, and repeat this process multiple times.

You can enjoy with 'shichimi', or 'sansho', Japanese spices, but use any chilies, if you like it spicy.
