Italian Chicken And Rice

This is sort of an Italian twist on an Asian chicken fried rice!

Cooking instructions

* Step 1

Chop raw chicken to small pieces

* Step 2

Heat large saucepan on medium-high heat and add olive oil and then 1 clove garlic. Sautée 1-2 minutes.

* Step 3

Add chicken and cook through. Remove chicken and set aside.

* Step 4

Using remaining oil in pan, sautée the rest of the garlic and the onion until onions are almost clear.

* Step 5

Add chicken broth as bring to a boil

* Step 6

Add vegetables. Cover and simmer for 10-20 minutes depending on vegetables you're using.

* Step 7

Add salt, pepper, oregano, and basil. Stir. (To give this recipe some punch, add a teaspoon or two of crushed red pepper now).

* Step 8

Add a couple pinches d flour to reduce chicken broth if necessary and mix. Mixture should have about 1/4 cup to 1/2 cup liquid remaining.

* Step 9

Add rice and mix everything together. Enjoy!
