Fat Duck Chili

Cooking instructions

* Step 1

Soak beans overnight. In a pressure cooker, steam beans for 25 minutes.

* Step 2

Transfer beans to a Dutch Oven and simmer in remaining juice from the steamer/pressure cooker.

* Step 3

Slice and Smash garlic, mixing into the simmering beans.

* Step 4

Add Thyme and Salt

* Step 5

Add small can of tomato paste

* Step 6

In a pan, heat either duck or goose fat

* Step 7

Slice both sausages and fry in pan for 7-10 minutes until golden. Add sausages to the beans in the Dutch Oven

* Step 8

Add duck confit to the beans. Cook for 20 more minutes
