[Very Easy] Zingy Mango Chicken

Cooking instructions
* Step 1
Prepare all the vegetables (cut the peppers, dice the mangos, etc)
* Step 2
In a large skillet, heat oil on medium-high. Season both sides of chicken with salt and black pepper. Add chicken to skillet and cook for 2 minutes per side, until golden brown
* Step 3
Add everything else and bring to a simmer. Reduce heat to medium, partially cover and cook for 5 minutes, undisturbed, until chicken is cooked through
* Step 4
Add rice to skillet and stir to combine. Cook for 1 minute to heat through.
