Preheat the oven to 350 degrees. In a large bowl, mix together all the ingredients well to form a batter. Spray the muffin tins with cooking spray. Use a ladle and scoop the batter into mould. Bake at 350 degrees for 15-20 mins or until baked through. The muffins will be golden brown and when a toothpick is inserted, it will come out clean. Remove from the oven and allow them to cool. Refrigerate or freeze any extras.
