Aloo anday ki bhujia

A very simple recipe for those pressed for time. Aloo Anday Ki Bhujia (scrambled eggs with potatoes) is a popular Pakistani dish made with scrambled eggs and potatoes. It is known for its simplicity and quick preparation, making it a go-to meal for many households.

Ingredient

1/4 cup

oil

1 tsp.

cumin seeds

1/2 cup

water

1/2 tsp.

turmeric

eggs

1/2 cup

frozen peas

Cooking instructions

* Step 1

Whisk the eggs with salt, turmeric and chilli powder.

* Step 2

Add green chilli and cilantro and mix well. Set aside.

* Step 3

Heat oil in a skillet and add cumin seeds. Allow to crackle.

* Step 4

Add the onions and sauté until golden.

* Step 5

Add cumin powder, coriander powder, tomato paste and ¼ cup water. Mix well and cook till oil separates.

* Step 6

Add the potatoes and peas and remaining water. Cover and simmer till potatoes are tender. Stir often.

* Step 7

Increase the heat and pour the whisked eggs. Mix well to scramble the eggs. Cook till eggs are cooked through.

* Step 8

Serve with paratha.
