Salmon en papillote

Salmon en papillote is a fancy name for cherry tomato halves roast on top of salmon fillets baked in paper. It makes a delicious, easy fuss-free dinner. The recipe is simple, but so delicious and so good for you too. In fact, it is so simple you can practically cook it from the picture!

Cooking instructions

* Step 1

Preheat oven 375F.

* Step 2

Grate the carrot with a peeler and set aside.

* Step 3

Line a baking tray with parchment paper and arrange carrot, onion and season with salt and pepper and drizzle of olive oil.

* Step 4

Place a salmon fillet on top of the onions and place tomatoes on top with half a clove of garlic and rosemary sprig.

* Step 5

Season with salt and pepper and drizzle of olive oil.

* Step 6

Close the parchment paper (like an envelope) and repeat the process with the remaining fillet.

* Step 7

Bake for 25 minutes, unwrap the salmon and if desired, broil for a few minutes.

* Step 8

Serve with the baked vegetables.
