Tawa chicken

This is a popular street food that is made on large tawas/a cast iron flat or concave round shaped pan usually used for making rotis/chapatis. You can of course use a frying pan. The soul of this recipe is the tawa masala. Fresh coarsely ground coriander and cumin seeds along with freshly minced ginger-garlic elevates the taste. Tawa Chicken is a dry dish. If you want it saucy, you can increase the quantity of the tomato and yogurt. It is an amazing spicy chicken curry and the best thing is it comes together in no time. You will absolutely love this dry Chicken Curry that is delicious, fragrant and warming and will become your favourite weeknight meal.

Cooking instructions

* Step 1

Heat the tawa and melt butter with oil.

* Step 2

Add ginger and garlic and fry 1 minute.

* Step 3

Add chicken, salt, and cumin seeds. Cook till colour changes.

* Step 4

Add chilli powder, crushed coriander seeds, crushed cumin seeds and garam masala and lemon juice. Mix.

* Step 5

Cover and steam cook on low flame for 10 minutes.

* Step 6

Remove cover and reduce the liquid.

* Step 7

Add yogurt; mix and cook to desired consistency of gravy.

* Step 8

Switch off flame, garnish with cilantro and green chillies.

* Step 9

Serve with fried rice, roti or paratha.
