Shami kebab buns

Shami kebab buns

Shami Kebabs, the tender patties made with beef and yellow split peas, and then dipped in eggs and pan-fried, are a year-round favourite in Pakistan. Almost every house has a shami kebab freezer stash waiting for the next unexpected guest, tea time snack or even as a side with main meal.

Ingredient

warm milk

1 tbsp.

oil

1/2 kg

ground beef

Cooking instructions

* Step 1

In a stand mixer, add the dry ingredients and mix well.

* Step 2

Add the egg, milk and oil and knead.

* Step 3

Gradually add water to knead a smooth dough, like pizza dough. Place dough in an oiled bowl, applying oil on dough also. Cover and rest in a warm place for 1 hour or till double in size.

* Step 4

In a food processor, add the ground beef, kebab masala and cilantro. Blitz to a smooth paste. Set aside.

* Step 5

Preheat oven 350F.

* Step 6

Turn out the dough on a floured surface and divide it into 2 pieces. Roll out each piece into a very thin rectangle, without tearing.

* Step 7

Spread the topping thinly and evenly over the top of each dough and start rolling like Swiss roll.

* Step 8

Cut the log into desired size pieces, ideally 5-6 and place on a parchment lined tray.

* Step 9

Bake for 1-2 hour or until nicely browned and cooked through.
