Pithala and Bhakri (पिठलं आणि भाकरी)

Pithala and Bhakri are traditional staple foods in Maharashtrian cuisine. Pithala is a besan/chickpea flour-based spicy, curry-style dip to be eaten with Bhakri, which is a millet flatbread. Cooking instructions

* Step 1

To prepare the Pithala: First, make a paste of besan, salt, chilli powder, caraway seeds and turmeric powder. Whisk to a lump free batter.

Then heat oil in an earthen or iron kadhai. Add mustard seeds, curry leaves, garlic paste, hing and saute well.

Then fry the onion till it turns pink. Then add the batter, quickly mix and keep cooking for the next 5 to 7 min. It will turn aromatic and shiney.

Add salt, adjust seasoning taste and turn off heat. Garnish with coriander leaves. Pithala is ready

* Step 5

To make Bhakri: Mix the sorghum flour with salt and boiling hot water in small quantities. Mix with a spoon. Cover for 5 minutes.

Then knead well for 5 to 8 minutes till you have a soft and pliable dough. Make tennis ball-sized portions from the dough.

Then heat an iron skillet. Press the dough balls on a wooden platform sprinkled with millet flour. Make it into a round disc by pressing with your hand.

Place it on hot skillet. Dip a small ball of cloth in water and gently wipe the top of the disc or Bhakri with this cloth to allow proper cooking.

* Step 9

Turn it over when base is cooked. Cook the top for 1 minute. Then roast on fire till it puffs up from both sides. Use tongs to hold.

* Step 10

Serve immediately with Pithala, butter, onions, green chillies and garlic chutney. Yummy 😋😋
