Pithala and Bhakri (पिठलं आणि भाकरी)
Pithala and Bhakri are traditional staple foods in Maharashtrian cuisine. Pithala is a besan/chickpea flour-based spicy, curry-style dip to be eaten with Bhakri, which is a millet flatbread. The combination is delightful and very healthy.

Cooking instructions
* Step 1
To prepare the Pithala:
First, make a paste of besan, salt, chilli powder, caraway seeds and turmeric powder. Whisk to a lump free batter.
* Step 2
Then heat oil in an earthen or iron kadhai. Add mustard seeds, curry leaves, garlic paste, hing and saute well.
* Step 3
Then fry the onion till it turns pink. Then add the batter, quickly mix and keep cooking for the next 5 to 7 min. It will turn aromatic and shiney.
* Step 4
Add salt, adjust seasoning taste and turn off heat. Garnish with coriander leaves. Pithala is ready
* Step 5
To make Bhakri:
Mix the sorghum flour with salt and boiling hot water in small quantities. Mix with a spoon. Cover for 5 minutes.
* Step 6
Then knead well for 5 to 8 minutes till you have a soft and pliable dough. Make tennis ball-sized portions from the dough.
* Step 7
Then heat an iron skillet. Press the dough balls on a wooden platform sprinkled with millet flour. Make it into a round disc by pressing with your hand.
* Step 8
Place it on hot skillet. Dip a small ball of cloth in water and gently wipe the top of the disc or Bhakri with this cloth to allow proper cooking.
* Step 9
Turn it over when base is cooked. Cook the top for 1 minute. Then roast on fire till it puffs up from both sides. Use tongs to hold.
* Step 10
Serve immediately with Pithala, butter, onions, green chillies and garlic chutney. Yummy 😋😋
