Vrat Ka Pulao/ Sama Ka Pulao
Sama rice which is also known as Samak chawal, Variche tandool, Varai, Bhagar, Moraiya, ancient millet, and sama ke chawal is a must have vrat grain in India. No vrat or fasting is complete without this food. It's eaten as preparation like cooked rice, but let's make it a little more fancy and make it pulao style. It is protein and mineral rich grain and very delicious!

Cooking instructions
* Step 1
First, heat 1 tablespoon ghee in a pan. Drain and add the sama rice in it. Saute for 5 minutes. Then add boiling water and salt, cook covered on low flame till it is soft, cooked and water is absorbed. Remove after cooking and cool to room temperature. Separate the grains with a fork and keep the rice without cover.
* Step 2
Now heat the pan again. Add 1 tablespoon ghee. Slow fry the nuts one by one and remove in a plate.
* Step 3
Then add rest of the ghee and pop cumin seeds in it. Then saute the chillies, ginger for 1 minute. Then add both the potato pieces and saute till crispy.
* Step 4
Then add curd, salt, sugar, chilli and cumin powder and mix well while stirring. Then add the cooked sama rice.
* Step 5
Now gently mix well, mix in half of the nuts and coriander leaves and adjust the seasoning. Your vrat ka pulao is ready.
* Step 6
Serve it garnished with rest of the nuts, coriander leaves and roasted makhana in the side. Enjoy!
