Vada Paav Sliders

Cooking instructions

* Step 1

First, keep oil to heat on medium heat in a thick based kadhai or woke.

Then mix in potatoes, spices, ginger garlic paste, chillies, coriander and lemon juice to make a dough like mix.

* Step 3

Then prepare a thick batter of besan, salt, omum seeds, turmeric and chilli powder. Pour a tablespoon of hot oil and whip well to make an airy batter. Take dry besan mixed with salt and chilli powder in a plate.

Then make small balls of the potato mixture and first roll it in dry besan and then coat with wet besan batter.

* Step 5

Drop in hot oil and deep fry till golden on both sides. Or air-fry on 200 power for 20 minutes, checking in between after 10 minutes. Then drain Vada on absorbent paper.

To make dry chutney: lightly roast peanuts, garlic and dry red chilli on a slow flame. Then grind everything mentioned above together till you have a coarse powder in hand.

* Step 7

To assemble, place the butter roasted and slit buns in a plate.

Then spread green chutney on base side. Place one Vada on it. Then spread the tamarind chutney on the Vada. Then sprinkle lots of red dry peanut chutney and boondi on top. Press with the top side of bun.

* Step 9

Serve with fried green chillies, more dry chutney and boondi sprinkled in sides. Enjoy hot and tasty Vada Paav sliders in Tea Time.
