Peanut Cashew Til Chikki
Sankranti celebration is so much fun all over as there are so many harvest foods available in abundance! There are vegetables, fruits, nuts, roots and so much more to choose! Sesame seeds, cashews and peanuts are favourites when Sankranti chikki or brittle sweets are made. They are full of proteins, energy, essential fats , vitamins and immunity boosters . Cooking instructions
* Step 1
First, dry roast the peanuts till they are crunchy and raw taste is gone. Cool and remove skin. Sieve away the skins.
* Step 2
Then dry roast the sesame seeds till they are crunchy but retain colour.
* Step 3
Dry roast cashews till they are just starting to become golden and switch off flame. (Keep flame low while roasting,)
* Step 4
Then add jaggery, cardamom powder and water to a thick bottomed pan and melt jaggery on low flame. Then mix in ghee and keep stirring.
* Step 5
Melt it to two string consistency and switch off flame. Add all the nuts and stir quickly.
* Step 6
Pour the mixture on the greased and lined tray and press all over with a greased spatula or back of a katori. Make marks of square shape if you need
* Step 7
Leave it to cool and set. Then break into desired shapes and store in airtight box. Enjoy this healthy and crunchy chikki anytime!
