It's that Joyful time of the year when the first harvest festival of Sankranti rings in. It's celebrated all over India with different names and colouful festivities. There are so many delicious dishes prepared with the star ingredients of the season Sesame seeds and jaggery (Til and Gud). I have prepared Revdi which is similar to a caramel candy and also like a brittle candy. Try it out and enjoy! Happy Makar Sankranti , Pongal, Bihu, Lohri and Nabo Varsha to all!

Cooking instructions
* Step 1
First, roast the sesame seeds till they are aromatic, pop up but retain colour. Then take away from fire and cool.
* Step 2
Now, heat a kadhai and add Jaggery to it. Add 2 tablespoon water and melt it on low flame. Add 2 tablespoon ghee and mix well.
* Step 3
Keep stirring till the jaggery syrup becomes thick and 3 string consistency is reached. Put a small drop of syrup in a bowl of cold water.
* Step 4
Check if the jaggery solidifies and breaks easily. If it doesn't break and is soft, cook on low flame for 1 minute further and check again.
* Step 5
When the syrup reaches hard ball consistency, switch off flame and quickly add the jaggery, rose essence and stir well.
* Step 6
Take the mixture on greased and lined tray and with the help of parchment paper, keep folding and mixing the the prepared Revdi mixture 7 to 8 times.
* Step 7
Now, take out small portions of the mixture and press with hand in the shape of Revdi.
* Step 8
Do this fast before the mixture becomes hard. Keep all the revdis on a plate till they harden.
* Step 9
Store in an airtight box and enjoy! Happy Sankranti!🪁🪁🪁
