We all have tasted khajoor chutney with chaats. Taking inspiration from it, I have come up with this dates dip which is a blend of dates, soy sauce, chilli sauce, spices , and can be paired with any fried or crisp dish as a dip and enjoy the flavours !
Dates are super rich in iron, calcium, potassium and fiber. They are a healthy source of natural sugar. So do try out this recipe.

Cooking instructions
* Step 1
Soak dates in hot water for 4 to 5 hours. Then remove seeds and chop fine. Alternatively, you can use soft black deseeded dates and follow all the steps without pre soaking.
* Step 2
Then make a paste in grinder. The paste should be fine. Use the soaking water as needed.
* Step 3
Now heat oil in a pan. Add ginger and garlic paste and saute' for a minute. Then saute' the dates paste for a minute to get a nice roasted flavour.
* Step 4
Then add all the sauces, and cook for 1 minute.
* Step 5
Then add water, salt, pepper and mix well. Remove from fire and cool. Store in a glass jar. If you want to store for longer duration, mix in 1 tablespoon vinegar and then store.
* Step 6
Serve with all fried dishes, crackers, pooris, Chinese momos or eat as a side dish.
