Chole is a protein-rich dish made with chickpeas and spiced gravy. Puri is fried and puffed bread made with whole wheat flour and salt. I have given tips to make crispy puffed puri which stays puffed for long. Enjoy this dish in meals, hotels, or your party too.

Ingredient

Semolina

Warm water to mix

Oil to deep fry

Tea water

2 tsp

Cardamom

2 tablespoons

Ghee

1/2 tsp

Hing

1 tablespoon

Ginger garlic paste

2 tablespoons

Punjabi Chole masala

1.5 cup

Tomato puree

2 tsp

Cumin

as needed

Water

1 tablespoon

Lemon juice

Cooking instructions

* Step 1

First, pressure cook the soaked Chhole in freshwater. Add 1.5 cups water to 1 cup soaked Chhole. Then add tea water, bay leaf, salt, cardamom, cloves, and a pinch of soda. Cover and pressure cook them.

* Step 2

Cook till 7 to 8 whistles till the chhole are cooked soft. Cool them completely. Also, grind 2 tablespoons cooked chole to paste and keep ready.

Mix the puri dough with.

* Step 4

Till then let's make the Chhole. Heat ghee in a kadhai. Add cumin seeds, thing, and stir well. Then add onions and cook till golden.

* Step 5

Now add the ginger garlic paste and saute well. Add tomato puree, all the spices, chhole masala, and stir well. Cook covered till fat separates. Then add the chole paste and mix well.

* Step 6

Cook further 5 minutes. Now add the cooked chhole and mix well. Adjust spices and cook covered for 10 minutes on low heat till aromatic. Remove once cooked and keep hot.

* Step 7

To make the puris, knead the dough once more gently. Heat oil to fry on low to medium flame. Now take ball-sized pieces of dough and roll them out into round puris or elongated bhaturas.

* Step 8

Deep fry till puffed up on both sides and golden brown. Remove and drain on kitchen paper.

* Step 9

Add lemon juice to Chhole and mix. Serve them with chopped onion, ginger juliennes. Serve piping hot puris or bhaturas. Enjoy!
