This delicious version of Daal Khichdi has 5 types of daals or lentils to give you maximum proteins, vitamins, energy and minerals in these pandemic times. Khichdi is a very nutritious food recommended for everyone from children to seniors , pregnant and lactating moms, weight watchers and underweight people and for those who are unwell and recovering from sickness.

Cooking instructions
* Step 1
First, wash and soak the daals and rice in sufficient clean Water for 2 hours.
* Step 2
Then drain and boil the drained water for cooking.
* Step 3
Heat a pan. Add 2 tsp. ghee, splutter mustard and cumin seeds. Add ginger and garlic. Saute well.
* Step 4
Then fry onions, chillies, curry leaves for a minute.
* Step 5
Then add the rice and daals and keep stirring for a minute.
* Step 6
Then add all the spices and seasonings and combine well. Pour the mixer in pressure cooker vessel. Fill the pressure cooker base with water. Keep base plate. Keep the vessel. Then add 8 cups boiling water to the daal and rice mixture and cover with lid. When steam starts coming out from pressure vent, put the weight on cooker and cook for 15 minutes on low flame.
* Step 7
After cooking, cool till steam subsides. Open and add 1 tsp ghee on top. Serve steaming hot khichdi with masala buttermilk and salad. Enjoy.
