Italian Penne All' Arrabbiata with Insalata Caprese

It's super tasty with a unique tomato and garlic sauce in olive oil which has got fragrant Italian herbs. Insalata Caprese is the special Italian accompaniment which I have paired this pasta and it's my favourite! This is a crunchy , utterly simple Italian salad from the region of Campania. It has ripe red fresh tomatoes, crumbled mozzarella ( you can use feta also). It's drizzled with extra virgin olive oil, sea salt, black pepper and fresh basil or arugula! I used the humble cilantro as basil was over at the supermarket! But I have given a generous sprinkle of dried herbs like basil, oregano and thyme. The result is irresponsible combo of Italian flavours! Enjoy

Cooking instructions

* Step 1

First, boil water with 1 tsp salt and 1 tsp olive oil till it get a rolling boil. Add the pasta and boil till al dante' or just done or till 8 minutes.

* Step 2

Then remove and rinse in cold water and keep covered. Then heat a pan, add 1 tablespoon olive oil. Then as it heats up, add garlic, saute' well.

Then add onions, cook till pink and fragrant. Then add tomatoes and cook well. Add some pasta water and let it cook covered till you get a sauce like consistency.

Then add mixef herbs and chilli flakes. Add salt and a pinch of sugar. Then add some grated cheese and mix well. Then add pasta, toss well on low heat for 2 minutes. Then remove from flame. Arrange the pasta in a serving plate and sprinkle with extra virgin olive oil, grated cheese and fresh basil. Serve hot with your choice of accompaniment.

Caprese Insalata: Arrange thick Tomato slices on a platter. Alternatively arrange slices of mozzarella or arrange crumbled bocconcini on top of each slice.

Then drizzle with extra virgin olive oil, sea salt, mixed herbs and top with fresh basil. Serve immediately. Enjoy your Italian yummy meal!
