Keto Special Coconut Truffles

The Keto diet has been popular recently with those needing to loose weight faster. This diet recommends consuming high fat, moderate proteins and very low carbohydrates which results in ketosis, where the body burns fats instead of carbohydrates for its energy requirements. There are many food groups which are avoided to reach a desired weight and it needs to be followed under a dietician's supervision. Also, moderate portions are the key to its success. In my unique recipe of Keto Special Truffles, I have used the star ingredients of Keto diet which are Almonds, Coconut and Paneer or cottage cheese. For a sweet touch, I have added small amount of stevia which can be replaced with either xylitol or erythritol. ( In very low quantities) It can be made totally sugar free also. Cooking instructions

* Step 1

First, heat a pan. Add the ghee or clarified butter and then add the paneer. Keep the flame low. Cook the paneer while stirring continuously for 5 minutes.

Then add the almond flour (I used homemade), dry coconut and mix well, cook for 2 minutes. Then sprinkle the almond milk and combine all well. Cook for 1 minute.

Now switch off the flame. Add the stevia, salt and combine well. Then add the vanilla and colour and stir well to combine everything. Let the mixture cool for 5 minutes on counter.

Then spread the rest of coconut on a plate. Prepare small balls of the mixture and roll very gently in the coconut to cover them well.

Arrange on paper cups and serve them chilled. Enjoy this guilt free Keto dessert in very small portions.
