Capsicum Potato dry sabzi

A quick and tasty sabzi for any meal.
Cooking instructions
* Step 1
Peel and cut the potatoes into small cubes. put in normal water. and cut the capsicum into cubes. Heat 2 tbsp oil in a kadhai add capsicum cubes and stir fry for 3-4 minutes on high flame. transfer to a plate and keep aside.
* Step 2
Then add the remaining oil add cumin seeds, onion, curry leaves, and green chilies. saute for 1 minute. (if you don't like onion, skip it) add potatoes and stir fry on high flame for 2 minutes. add tomatoes, salt, red Chilli powder, and turmeric powder. Mix well.
* Step 3
Add 2-3 tbsp water, cover, and cook for 5-6 minutes on low flame. When potatoes turn soft add fry capsicum.mix well.
* Step 4
Cover and cook for 3-4 minutes on medium flame. remove the lid and cook on high flame for 2 minutes. Turn off the flame. Dish out the sabzi.garnish with coriander leaves and Serve with roti or paratha.
