Cooking instructions
* Step 1
Wash and cut vegetables as shown in pictures or as you desire.
* Step 2
Boil 2 litres water,Add cauliflower,carrot and radish.Boil 3 minutes on medium heat.Strain.Dry in sunlight for 1-2hours on a cotton cloth/towel.If sunlight is not available dry under fan.
* Step 3
Now dry roast crushed mustard,carom seeds and nigella seeds for 1 minute on lowest flame. Take out and keep aside.
* Step 4
Dry roast remaining whole spices and salt.Coarsely grind and mix to mustard seed powder.
* Step 5
Add powdered spices and asafoetida.Mix and keep aside.
* Step 6
Heat mustard oil till smoking point.Let it cool.Take all vegetables in a large mixing bowl.
* Step 7
Add vinegar and powdered spices.Mix well
* Step 8
Pour mustard oil over vegetables.
* Step 9
Store in a clean dry glass /ceramic jar.Cover lid Put in sunlight for 4-5days.
* Step 10
Mix Veg pickle is ready to be served.Enjoy with your meals.
