Ginger Chicken

Cooking instructions

* Step 1

Chop the chickens into 3 large chunks and marinate in a bowl with ginger, garlic, chilli powder, half the coriander, lime juice and 1 tbsp of oil. Stir well and cover and leave to marinate until you cook, ideally for a few hours or over night.

* Step 2

Finely chop the onions into very small pieces. Ideally, chop the onions in a food processor into a fine paste (best for curries).

* Step 3

Heat the remaining oil in a large frying pan, add the onion and stir-fry for 8 minutes until soft. Stir the turmeric and cook for 1 more minute, stirring well.

* Step 4

Add the chicken mixture with the marinate, and cook over high heat until the chicken changes colour.

* Step 5

Add coconut milk, chilli and stock, then cover and simmer for 20 minutes until the chicken is tender.

* Step 6

Stir in the remaining coriander, then serve with pilau rice and two dollops of mango chutney.

* Step 7

Heat two naan bread for 10 minutes in an oven and serve along with it.
