Cooking instructions
* Step 1
For Chena.....a). Take 1 litre milk, let it boil, add 1 tbsp vinegar & 1 tsp dahi as soon as milk starts boiling.
* Step 2
B). Keep stirring until chena separates from the milk, turn off the flame, strain it.
* Step 3
C). Wash it under running water to remove the vinegar taste.
* Step 4
Add chena in a mixing bowl, mash it thoroughly,
* Step 5
Now add sooji & ata. In goes elaichi powder & 1 tsp powdered sugar, mix it well. Knead it, make a soft dough, keep aside.
* Step 6
Side by side, add full cream milk in a deep bottom pan, let it boil. Mix custard powder with lukewarm milk along with rest of the sugar, mix it well.
* Step 7
Add in the boiling milk, keep stirring, cook it until a lil thick. Turn off the flame. Keep aside. (Custard should be a lil thin).
* Step 8
Now take small portions of the dough, roll them in the shape of PHULKI.
* Step 9
Take a wok, add oil, heat it, moderate the flame, deep fry them in batches until light brown.
* Step 10
Take out in a bowl, keep aside.
* Step 11
Take a serving bowl, add phulkis in moderate numbers, pour custard over it, garnish it with chopped nuts.
