Fried Chicken with Spring Onion Sauce 蔥油香煎雞扒
Cooking instructions
* Step 1
Pan fry the chicken with skin facing down using a really hot pan without oil
* Step 2
Turn to medium heat and keep frying for 5 minutes on each side
* Step 3
Pan fry the skin side again using high heat until crispy
* Step 4
Take the chicken out to a plate for use
* Step 5
Saute spring onion and garlic using the chicken oil left on pan
* Step 6
Add 100ml water, salt and white pepper to make a sauce
* Step 7
Put the spring onion sauce on the side of chicken to prevent the crispy skin from softening
* Step 8
Serve with rice or noodles
